1/2 Cup Extra Virgin Olive Oil
1 Large Yellow Onion - Coarsely Chopped
6 Cloves Garlic - Diced
1 Small Green Pepper - Diced
1 Med. Eggplant - Unpeeled & 1" Cubed
2 Med. Zucchini - Split & 1" Cubed
3 Small Yellow Squash - Sliced
1/2 Lb Mushrooms - Sliced
1/4 Cup Fresh Basil - Chopped
1 - 15oz. Can Tomato Sauce
1 Cup Water - More as needed
Salt & Pepper to taste
Heat oil and saute onion, garlic & pepper till onion is translucent
Add eggplant, zucchini, squash & tomato, cook for 5 min., stirring constantly
Add tomato sauce, basil & 1-cup water
Cook over reduced heat for 30 min stirring occasionally
Serve over rice or pasta
