Ratatouille

Ingredients

  • 1/2 Cup Extra Virgin Olive Oil
  • 1 Large Yellow Onion - Coarsely Chopped
  • 6 Cloves Garlic - Diced
  • 1 Small Green Pepper - Diced
  • 1 Med. Eggplant - Unpeeled & 1" Cubed
  • 2 Med. Zucchini - Split & 1" Cubed
  • 3 Small Yellow Squash - Sliced
  • 1/2 Lb Mushrooms - Sliced
  • 1/4 Cup Fresh Basil - Chopped
  • 1 - 15oz. Can Tomato Sauce
  • 1 Cup Water - More as needed
  • Salt & Pepper to taste

Directions

  1. Heat oil and saute onion, garlic & pepper till onion is translucent
  2. Add eggplant, zucchini, squash & tomato, cook for 5 min., stirring constantly
  3. Add tomato sauce, basil & 1-cup water
  4. Cook over reduced heat for 30 min stirring occasionally

  • Serve over rice or pasta
