Pork Roast with Apples

Ingredients

  • 1 Lb. Pork Roast
  • 1 Apple, sliced
  • 1 Small Onion, sliced
  • 1 Tbsp. Apple Cider Vinegar
  • 1 Tbsp. Apple Butter
  • 1 Tbsp. Rosemary
  • 1 Tbsp. Thyme
  • Kosher Salt and Pepper

Directions

  1. Coat roast with olive oil, kosher salt and pepper.
  2. Mix all other ingredients in a small bowl.
  3. Sear roast in a heavy skillet in bacon grease or olive oil.
  4. Remove roast from pan and deglaze the pan with the apple mixture.
  5. Add roast back to pan.
  6. Cover and bake at 400° for 30-45 minutes.

Notes

  • Serve with long grain and wild rice.
