Pork Roast with Apples

1 Lb. Pork Roast
1 Apple, sliced
1 Small Onion, sliced
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Apple Butter
1 Tbsp. Rosemary
1 Tbsp. Thyme
Kosher Salt and Pepper
Coat roast with olive oil, kosher salt and pepper.
Mix all other ingredients in a small bowl.
Sear roast in a heavy skillet in bacon grease or olive oil.
Remove roast from pan and deglaze the pan with the apple mixture.
Add roast back to pan.
Cover and bake at 400° for 30-45 minutes.
Serve with long grain and wild rice.
