3/4 Lb. Shrimp, Shelled & Deveined
2 Cups Broccoli Florets
1 Med. Red Bell Pepper, Cut to 2" Strips
1/2 Cup Snow Peas
1/2 Cup Mushrooms, Fresh, Sliced
1/4 Clip Water Chestnuts (Optional)
1/2 Cup Double Strength Chicken Broth
1/4 Cup Water or Wine
1 Tsp Basil, Dried
1 Tsp Lemon Juice
Peanut Oil for Frying
Heat oil in wok to med.
Add shrimp and stir-fry 4 min. or until shrimp are just done.
Remove shrimp from wok and reserve.
Add all vegetables except onions and cook to taste. Remove from wok and reserve.
Combine cold water, cornstarch, basil and lemon juice, mix well.
Put chicken broth and water mixture in wok and stir well.
Add vegetables and cook until thickened.
Add green onions and shrimp, heat through and serve.
