Sirloin Steak with Mushroom Marsala Sauce

1/4 cup olive oil

2 shallots or 1 white onion (finely diced)

1 1/2 pounds mushrooms (cleand and sliced)

2 cups Marsala wine

1 cup beef stock

1 tbsp. thyme leaves (chopped)

8 (8 to 10 ounce) NY Strip steaks

Salt and pepper

1/2 cup unsalted butter

1/2 bunch fresh chives (chopped)


Heat olive oil in a large saute pan.

Cook the shallots (or onion) and mushrooms gently until translucent.

Deglaze with wine.

Add stock and thyme, reduce by two-thirds.

Sear meat, grill until medium rare, let rest.

Strain sauce and whisk in butter to finish.

Season with salt and pepper, as needed.

Spoon sauce of steaks and garnish with chives.
