Sweet and Sour Shrimp

Ingredients

  • 1 20 oz Can Juice Packed Pineapple Chunks
  • 3/4 Cup Cold Water
  • 1/3 Cup Lemon Juice
  • 1/3 Cup Light Brown Sugar, Packed
  • 3 Tbsp Soy Sauce
  • 3 Tbsp Cornstarch
  • 1/8 Tsp Ground Ginger
  • 1 Lb. Med. Shrimp, Peeled & Deveined
  • 1 Green Pepper, Chunked
  • Hot Cooked Rice

Directions

  1. Drain Pineapple and reserve liquid
  2. In a heavy skillet combine pineapple juice, water, lemon juice, sugar, cornstarch, soy sauce, and ginger
  3. Cook over med. heat stirring until thickened
  4. Add shrimp and cook until just done
  5. Add pineapple, pepper, and water chestnuts
  6. Heat through
