Sopaipillas
Ingredients

2 Tbsp Lard or shortening

2 Cups Flour, A11 Purpose

2 Tsp Baking Soda

1 Tsp Salt

2/3 Cup Water, Lukewarm

Oil for Frying

Sugar

Cinnamon

Honey

Directions

Cut lard into flour, baking soda and salt completely

Sprinkle in water 1 Tbsp at a time, tossing with a fork until all flour is moistened and almost cleans side of bowl

Gather dough into a ball and refrigerate for 30 min.

Heat 2" oil to 400 deg.

Roll dough on a lightly floured surface to 12" X 10" rectangle

Cut into 2" X 3" rectangles

Fry 3 or 4 pieces at a time until puffed and golden brown, turning once

Drain on paper towels

Sprinkle with sugar and cinnamon

Notes

Serve with honey
