Spanakopeta

Ingredients

  • 1 Lb. Spinach, Finely Chopped
  • 1/2 tsp Salt
  • 8 Oz. Feta Cheese
  • 1 Small Onion, Finely Chopped
  • 2 Eggs, Lightly Beaten
  • 1 Tbsp Olive Oil
  • 1/4 Lb. Butter, Melted
  • 15 Filo
  • Pepper to taste

Directions

  1. Wash spinach and chop very fine
  2. Sprinkle with salt and let stand 15 min.
  3. Squeeze spinach to remove moisture. (it is important to remove as much moisture as possible to make a good filling)
  4. Combine spinach, cheese, onion, eggs, olive oil and pepper.
  5. Arrange 9 layers of Fila in the bottom of a greased baking pan, brushing each layer with butter.
  6. Cover with spinach filling
  7. Arrange 6 layers of Filo, also buttered, on top of filling
  8. Chill until firm
  9. Cut through top layers of Fila to mark servings
  10. Bake at 350 deg. for 45 min. or until golden brown
