Tzatziki Sauce 2

2 Cups Plain Yogurt
1 Cup Cucumber, Peeled, Seeded and Shredded
1 Tsp Garlic, Minced
1 Tsp Lemon Juice
Salt and Pepper to Taste
Double line a fine sieve with dampened cheesecloth
Add yogurt and drain over a bowl for 2 hours
Discard drained liquid
Combine remaining ingredients with yogurt and refrigerate at least 1 hour
