Sweet Potato Souffle

Ingredients

  • 3 Cups Sweet Potatoes - Boiled and Peeled
  • 1/2 Stick Butter - Softened
  • 3 Eggs
  • 1/8 Cup Milk
  • 1 Cup Sugar (optional)
  • 2 Tsp. Vanilla
  • 2 Tsp. Cinnamon
  • 1/2 Cup Pecans
  • 1/2 Cup Flour
  • 1 Cup Light Brown Sugar
  • 1/2 Stick Butter (softened)

Directions

  1. Mix all but last 4 ingredients and place in a casserole dish.
  2. Sprinkle on topping (see below).
  3. Bake at 350 for 30 minutes.

Notes

  • Topping: Mix last three ingredients well. Add Pecans.
