1 English Cucumber (diced)
2 Medium Tomatoes (diced)
1 Red Onion (diced)
2 Tbsp Italian Parsley (chopped)
2 Tbsp Fresh Lemon Juice
2 Tbsp Extra-Virgin Olive Oil
Salt and Pepper
1 Bunch Red Leaf Lettuce (chopped)
1 Bunch Green Leaf Lettuce (chopped)
1 Pita (grilled and quartered)
Combine cucumber, tomatoes, onion, parsley, lemon juice and oil in a large mixing bowl until blended.
Evenly distribute the lettuces on 4 salad plates and top with the cucumber-tomato mixture.
Serve with pita.
