2 Quarts Vegetable Oil (for frying)

1/4 Lb Dried Chick Peas (soaked overnight)

1/4 White Onion (rough chopped)

3 Green Onions (sliced)

3 Lg Cloves Garlic

1/2 Bunch Italian Parsley (rough chopped)

2 Tsp Ground Cumin

2 Tsp Ground Cardamom

2 Tsp Ground Coriander

Salt and Pepper


Heat fryer oil to 350°.

Add chick peas, onions, and parsley to a food processor and pulse until finely ground. Mix in cumin, cardamom, coriander, and salt & pepper to taste.

Test mix my frying a tablespoon of mix. Season as needed.

Scoop mix to create 1-2 oz balls, frying in batches until dark golden brown.


Inside of falafel should be bright green.
