3/4 Cup Graham Cracker Crumbs
1 1/2 Tbsp Butter (melted)
1 1/2 Lb Cream Cheese
1 Cup + 3 Tbsp Granulated Sugar
3 Lg Eggs
2 Tsp Vanilla Extract (divided)
1 16-Oz Sour Cream
Preheat oven to 300°.
Coat a springform pan with cooking spray.
Mix graham cracker crumbs with butter and press into the bottom of the prepared pan.
Add cream cheese to the bowl of a stand mixer and beat with paddle attachment until smooth.
Slowly beat in 1 cup of sugar.
Add eggs, one at a time, and beat well after each addition.
Add 1 tsp of vanilla and mix to incorporate.
Pour into prepared pan.
Bake for 1 hour, then remove.
Raise oven temperature to 400°.
Mix together sour cream, remaining 3 tablespoons of sugar and remaining 1 teaspoon of vanilla.
Spread evenly of cheesecake and let stand for 5 minutes.
Return to the oven and bake for 5 more minutes.
