Blackened Fish

Ingredients

  • 1 & 1/2 Tsp Cayenne Pepper
  • 1 & 1/2 Tbsp Paprika
  • 3 Tsp Seasoned Salt
  • 1 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp White Pepper
  • 1/2 Tsp Black Pepper
  • 1/2 Tsp Oregano
  • Olive Oil (as needed)
  • 3 Cloves Garlic - finely chopped
  • 1/4 lb Melted Butter
  • 1/2 lb Firm Meated Fish per person

Directions

  1. Mix the dry spices and set aside
  2. Marinate filets in olive oil and garlic for 2 hrs. (at least)
  3. Blot excess oil from filets with paper towel
  4. Preheat a cast iron skillet to very hot
  5. Dip filets in the melted butter
  6. Sprinkle seasoning on one side of filet (the more you use the hotter it is)
  7. Place the filet in the skillet seasoned side down-watch for a flame up from the butter
  8. Season the top of the filet

Notes

  • Do riot cook this dish in your kitchen as it makes huge amounts of smoke!
