Buddha Rice

3 Cups Long-grain Rice

2 Tbsp Cooking Oil (Peanut)

2" Piece Ginger Root - Finely Chopped

1/2 Tsp Salt

1 Bay Leaf

1 & 1/2 Cups Unsweetened Coconut Milk

1/4 Cup Soy Sauce


Wash rice and let dry in a colander, shaking occasionally

Heat oil in a heavy saucepan on med. high heat and add ginger root, saut6 till fragrant (1 min.)

Add rice, stirring continuously, for 2 min

Add salt, bay leaf, coconut milk, soy sauce and water

Bring to a boil arid let cook uncovered until liquid settles and holes form in the top of the rice, about five min.

Reduce heat to very low, cover and cook for 20 min.

Remove from heat and let stand covered for 10 min.

Fluff and serve hot
