Caesar Salad

1 Clove Garlic (Large)

1/3 Cup Oil (Veg. or Olive)

1 Tsp Worcestershire Sauce

1 Can Anchovies

1/4 Tsp Dry Mustard

Salt & Pepper to taste

1 Head Romaine Lettuce

1 Egg - Coddled

1/2 Cup Grated Parmesan Cheese



Cut garlic clove in half and rub into wooden salad bowl

Mash anchovies into a paste in a metal bowl

Add oil, Worcestershire sauce, dry mustard, salt & pepper to anchovy paste and mix thoroughly

Break up romaine lettuce into salad bowl

Add oil mixture to lettuce along with egg and juice of lemon

Toss well

Add Parmesan cheese and toss

Sprinkle with croutons


The original Caesar salad recipe did not contain pieces of anchovy; the slight anchovy flavor comes from the Worcestershire sauce.
