Chicken Broccoli Casserole

Ingredients

  • 1 1/2 Lbs. Chicken Breast (boneless & skinless)
  • 2 Cans Cream of Chicken Soup
  • 1 Bunch Broccoli (trimmed)
  • 1 Onion (coursely chopped)
  • 8 Oz. Sliced Mushrooms (fresh or canned)
  • 1/4 Cup Flour
  • 1 Tbsp. Salt
  • 1 Tbsp. Pepper
  • Salt & Pepper (to taste)
  • 1/4 Tsp. Cayenne Pepper
  • 1/4 Tsp. Granulated Garlic
  • 3 Slices Swiss Cheese
  • Cooking Oil
  • Hot Cooked Rice

Directions

  1. Cut chicken into 1/4" slices.
  2. Combine 1 tbsp. salt & 1 tbsp. pepper with flour and dredge chicken.
  3. Saute chicken.
  4. In a large casserole dish, combine soup, broccoli, onion, mushrooms, salt, pepper, cayenne pepper and garlic.
  5. Add browned chicken and mix.
  6. Top with cheese.
  7. Bake for 35-45 minutes at 350 degrees.

Notes

  • Serve over rice.
