Chili Con Carne

Ingredients

  • 2 Cans Cooked Tomatoes (large)
  • 1-1 1/2 Lbs. Ground Beef
  • 2 Medium Onions (coarsely chopped)
  • 2-3 Jalapeno Peppers (finely chopped)
  • 2 Bay Leaves
  • 1 Medium Green Pepper (coarsely chopped)
  • 2 Tbsp. Chili Powder
  • 1 1/2 Tsp. Cayenne Pepper
  • 1 1/2 Tsp. Crushed Red Pepper
  • 3 Cloves Garlic (finely diced)
  • 1 Tsp. Sweet Basil
  • 11/2 Tsp. Black Pepper
  • Salt (to taste)
  • Olive Oil

Directions

  1. In a heavy pot, heat oil and saute onions until opaque.
  2. Add jalapenos, chili powder, red pepper, garlic, basil, cayenne pepper, bay leaves, black pepper and salt and saute a few minutes to spread flavor.
  3. In a separate pan, brown ground beef and drain off grease.
  4. Add beef to pot and mix well.
  5. Crush tomatoes and add to pot along with their juice.
  6. Bring to a boil and add green pepper
  7. Reduce heat and simmer at least 1&1/2 hours.

Notes

  • Spice amounts are approximate according to taste for hotness.
  • Serve over white rice with crusty bread and butter.
