1 Lg. Can Diced Tomatoes
1 1/2 - 2 lbs. Beef Brisket
1/2 Cup Chicken Broth
1/4 Cup Red Wine (or Sherry)
2 Tbsp. Lime Juice
1/2 Cup Mojo
1 1/2 Tsp. Cumin
1 Tsp. Chili Powder
1/2 Tsp. All Spice
1 Tsp. Oregano
3 Tbsp. Cilantro
1 Sliced, Deseeded Jalapeno or 1 Sm. Can of Green Chilies or 1 Sm. Can of Chipolte Peppers in Adobo Sauce
1/2 Tsp. Salt and Pepper
2 Tbsp. Olive Oil
Sear meat in heavy skillet.
Marinate meat in all ingredients for at least 4 hours.
Combine marinade and seared meat in a Crock Pot.
Cook on high for 5-6 hrs or low for 8 hrs.
