Barbacoa

Ingredients

  • 1 Lg. Can Diced Tomatoes
  • 1 1/2 - 2 lbs. Beef Brisket
  • 1/2 Cup Chicken Broth
  • 1/4 Cup Red Wine (or Sherry)
  • 2 Tbsp. Lime Juice
  • 1/2 Cup Mojo
  • 1 1/2 Tsp. Cumin
  • 1 Tsp. Chili Powder
  • 1/2 Tsp. All Spice
  • 1 Tsp. Oregano
  • 3 Tbsp. Cilantro
  • 1 Sliced, Deseeded Jalapeno or 1 Sm. Can of Green Chilies or 1 Sm. Can of Chipolte Peppers in Adobo Sauce
  • 1/2 Tsp. Salt and Pepper
  • 2 Tbsp. Olive Oil

Directions

  1. Sear meat in heavy skillet.
  2. Marinate meat in all ingredients for at least 4 hours.
  3. Combine marinade and seared meat in a Crock Pot.
  4. Cook on high for 5-6 hrs or low for 8 hrs.
