Clam Chowder

Ingredients

  • 1/4 Lb. Salt Pork - Diced
  • 6-7 Med. Potatoes - Pealed and Cubed
  • 1 Tbsp Flour
  • 2 Med Onions - Finely Chopped
  • 4-6 Cups Scalded Milk
  • 2 Tbsp Butter
  • 1 Carrot - Very Finely Chopped
  • 2 to 3 6-1/2 oz. Cans of Clams

Directions

  1. In a heavy pot fry the salt pork until brown
  2. Add onion, carrot, and potatoes
  3. Cover with water and boil until tender
  4. Add salt & pepper
  5. Melt butter and mix in flour
  6. Add clams and milk and bring to a boil
  7. Add flour and butter
  8. Cook 5 min. to thicken
