Crab Chowder

1/4 Lb. Salt Pork - Diced
2 Tbsp Butter
1/4 Lb Smithfield Ham - Diced
1 Med Onion - Diced
1 Cup Celery - Diced
1 Small Green Pepper - Diced
1 Small Red Pepper - Diced
2 Tbsp Garlic - Minced
4 Cups Potatoes - Peeled & Diced
1/2 Tsp Thyme
1/4 Tsp Cayenne Pepper
1/2 Tsp Hot Sauce
2 Tbsp Worcestershire Sauce
2 Cups Corn (Fresh or Frozen)
1 Bay Leaf
3 Cups Half and Half
Salt & Pepper to Taste
2-3 Lbs. Crab meat (Fresh is best)
In a heavy pot brown pork, remove pork and retain drippings
Add butter to pot and melt
Add ham, celery, peppers, onion and garlic - saute 3-5 min
Add Stock, potatoes, thyme, cayenne pepper, hot sauce, Worcestershire sauce, bay leaf and half & half to pot and cook until potatoes are just tender (20 min.)
Add corn and cook 15 min more
Add crabmeat and cook until heated
Garnish with parsley and serve
