Crab Chowder

Ingredients

  • 1/4 Lb. Salt Pork - Diced
  • 2 Tbsp Butter
  • 1/4 Lb Smithfield Ham - Diced
  • 1 Med Onion - Diced
  • 1 Cup Celery - Diced
  • 1 Small Green Pepper - Diced
  • 1 Small Red Pepper - Diced
  • 2 Tbsp Garlic - Minced
  • 4 Cups Potatoes - Peeled & Diced
  • 1/2 Tsp Thyme
  • 1/4 Tsp Cayenne Pepper
  • 1/2 Tsp Hot Sauce
  • 2 Tbsp Worcestershire Sauce
  • 2 Cups Corn (Fresh or Frozen)
  • 1 Bay Leaf
  • 3 Cups Half and Half
  • Salt & Pepper to Taste
  • 2-3 Lbs. Crab meat (Fresh is best)

Directions

  1. In a heavy pot brown pork, remove pork and retain drippings
  2. Add butter to pot and melt
  3. Add ham, celery, peppers, onion and garlic - saute 3-5 min
  4. Add Stock, potatoes, thyme, cayenne pepper, hot sauce, Worcestershire sauce, bay leaf and half & half to pot and cook until potatoes are just tender (20 min.)
  5. Add corn and cook 15 min more
  6. Add crabmeat and cook until heated
  7. Garnish with parsley and serve
