Crabmeat Au Gratin

6 Tbsp Butter or Margarine - Divided

1 Cup Onion, Chopped

1/2 Cup Green Onion, Chopped

1/4 Cup Fresh Parsley, Chopped

1/2 Tsp Garlic, Chopped

1 Lb White Crabmeat

Salt to Taste

Louisiana Hot Sauce to Taste

1 Cup Water, Stock or Milk

1 Cup Cheddar Cheese, Grated

1/2 Cup Mozzarella Cheese, Grated


Preheat oven to 350 deg.

Melt 4 tbsp butter in a med. saucepan and saute onions, green onions and parsley until onions are clear

Stir in garlic, crabmeat, salt and hot sauce, reduce heat to low and continue cooling

In a separate pan melt 2 tbsp butter and add flour and cook until light brown, stirring constantly

Add liquid (Water, milk or stock) and cook until thickened, stir-ring constantly

Add cheddar cheese and cook until cheese is melted

Combine with the crab mixture in a greased casserole dish and top with mozzarella cheese

Bake for 20 - 30 min. or until cheese on top is melted and slightly browned
