Dirty Rice

3 Tbsp Vegetable Oil

1/2 Lb Chicken Livers - Chopped

1/2 Lb Chicken Gizzards - Chopped

1 Large Onion - Chopped

1 Green Pepper - Chopped

2 Celery Ribs - Chopped

3 Cloves Garlic - Chopped

1/2 Tsp Louisiana Hot Sauce (or to taste)

1/4 Tsp Cayenne Pepper (or to taste)

1/4 Tsp Black Pepper, 1/4 Tsp Black Pepper


Heat 2 tablespoons oil in heavy pot with a lid

Saute livers and gizzards until lightly browned

In another pan add 1 tablespoon oil and saute onion, pepper, celery and garlic till tender

Add vegetables to pot with livers and gizzards along with hot sauce, peppers, and salt

Add 114 cup of chicken broth and simmer over low heat until livers and gizzards are tender (30-40 min.)

Add remaining chicken broth and rice

Bring to a boil, reduce heat, cover and cook for 20 min. or until all liquid has been absorbed

Stir in green onion and parsley


Serve with crusty French bread
