Drunken Chicken


  • 3 Lb. Broiler or 4 Chicken Breast Quarters
  • Cup Fresh Lime Juice
  • Cup Golden Tequila
  • Cup Olive Oil
  • Tsp Orange Juice
  • Cloves Garlic, Pressed
  • Tsp Grated Lime Rind
  • Tsp Salt
  • Pineapple, Cubed
  • Bananas, Sliced
  • Strips bacon


  1. Wash chicken and pat dry. If using a whole chicken, remove backbone and break breast so chicken will lay flat.
  2. Combine next seven ingredients and pour over chicken in a covered dish or zip-lock bag.
  3. Marinate, refrigerated, overnight, turning occasionally.
  4. Thread pineapple and banana on skewers and wrap with bacon strips.
  5. Reserve marinade and grill over a hot fire until done, turning and basting frequently.
  6. Grill skewers the last 8 to 10 minutes of the cooking time, turning frequently.
