Drunken Chicken

3 Lb. Broiler or 4 Chicken Breast Quarters

Cup Fresh Lime Juice

Cup Golden Tequila

Cup Olive Oil

Tsp Orange Juice

Cloves Garlic, Pressed

Tsp Grated Lime Rind

Tsp Salt

Pineapple, Cubed

Bananas, Sliced

Strips bacon


Wash chicken and pat dry. If using a whole chicken, remove backbone and break breast so chicken will lay flat.

Combine next seven ingredients and pour over chicken in a covered dish or zip-lock bag.

Marinate, refrigerated, overnight, turning occasionally.

Thread pineapple and banana on skewers and wrap with bacon strips.

Reserve marinade and grill over a hot fire until done, turning and basting frequently.

Grill skewers the last 8 to 10 minutes of the cooking time, turning frequently.
