Easy Berry-Berry Hens


  • 1 Cornish Game Hen (thawed, quartered, with skin intact)
  • Smuckers
  • Fat-Free Rasberry Vinegarette
  • Garlic Powder
  • Onion Powder
  • Salt & Pepper
  • Onions (sliced) - optional
  • Lemon Zest - optional


  1. Preheat oven to 350.
  2. Using a spoon, separate the skin from the body of each piece, then sppon the vinegarette under the skin.
  3. Wrap each piece in plastic wrap and place in the fridge for at least 2-3 hours.
  4. Spray casserole dish with non-stick cooking spray.
  5. Arrange hen pieces in the dish and spread some of the preserves on the skin.
  6. Optional: top with a thin layer of onions and lemon zest.
  7. Bake for 45 minutes, or until the juices run clear when stuck with a fork.


  • The meat of the hens will be very red in appearance and pretty sweet.
