Easy Berry-Berry Hens

1 Cornish Game Hen (thawed, quartered, with skin intact)


Fat-Free Rasberry Vinegarette

Garlic Powder

Onion Powder

Salt & Pepper

Onions (sliced) - optional

Lemon Zest - optional


Preheat oven to 350.

Using a spoon, separate the skin from the body of each piece, then sppon the vinegarette under the skin.

Wrap each piece in plastic wrap and place in the fridge for at least 2-3 hours.

Spray casserole dish with non-stick cooking spray.

Arrange hen pieces in the dish and spread some of the preserves on the skin.

Optional: top with a thin layer of onions and lemon zest.

Bake for 45 minutes, or until the juices run clear when stuck with a fork.


The meat of the hens will be very red in appearance and pretty sweet.
