1 lb. Green Beans, 3" Cut

4 Slices Bacon, 1/2" Cut

1/2 Cup Onion, Chopped

1 Tomato, Chopped

1 Clove Garlic, Finely Diced

1/2 Tsp Dried Oregano

1/2 Tsp Salt

Dash Pepper

2 Tbsp Lemon Juice


Steam green beans until tender, remove from heat and rinse with cold water. Drain

Fry Bacon in a 10" iron skillet until crisp, drain on paper towels

Cook onion in bacon fat until tender, add tomato, garlic, oregano, salt and pepper

Simmer, uncovered, 5 min., stir in green beans and heat through

Drizzle with lemon juice and garnish with bacon
