Ingredients

  • 1 lb. Green Beans, 3" Cut
  • 4 Slices Bacon, 1/2" Cut
  • 1/2 Cup Onion, Chopped
  • 1 Tomato, Chopped
  • 1 Clove Garlic, Finely Diced
  • 1/2 Tsp Dried Oregano
  • 1/2 Tsp Salt
  • Dash Pepper
  • 2 Tbsp Lemon Juice

Directions

  1. Steam green beans until tender, remove from heat and rinse with cold water. Drain
  2. Fry Bacon in a 10" iron skillet until crisp, drain on paper towels
  3. Cook onion in bacon fat until tender, add tomato, garlic, oregano, salt and pepper
  4. Simmer, uncovered, 5 min., stir in green beans and heat through
  5. Drizzle with lemon juice and garnish with bacon
