Granville Island Chowder

Ingredients

  • 6 Slices Bacon
  • 1 Sm. Onion, Finely Chopped
  • 3 Cloves Garlic, Minced
  • 1 Sm. Green Pepper, Thinly Sliced
  • 2 Carrots, Thinly Sliced
  • 2 Tbsp Parsley, Fresh, Chopped
  • 4 Cups Tomatoes, Seeded and Chopped
  • 3 & 1/2 Cups Bottled Clam Juice
  • 1 Tbsp Thyme, Fresh (1/2 tbsp dried)
  • Salt To Taste
  • Fresh Ground Black Pepper To Taste
  • 4 Cups Potatoes, Peeled and Cubed
  • 2 lbs. Seafood, Boneless Fish, Shrimp, Crab, Etc

Directions

  1. Cut bacon into 1" pieces and fry until crisp in a heavy pot
  2. Add next 5 ingredients and saute over med. heat until tender, about 10 min.
  3. Add tomatoes, clam juice, wine, thyme, salt and pepper to pot and bring to a boil for 1 min.
  4. Reduce heat, cover and simmer for 20 min.
  5. Add potatoes, return to a boil and simmer until potatoes are tender
  6. Add seafood and cook for 5 min., stirring gently
