6 Slices Bacon |
1 Sm. Onion, Finely Chopped |
3 Cloves Garlic, Minced |
1 Sm. Green Pepper, Thinly Sliced |
2 Carrots, Thinly Sliced |
2 Tbsp Parsley, Fresh, Chopped |
4 Cups Tomatoes, Seeded and Chopped |
3 & 1/2 Cups Bottled Clam Juice |
1 Tbsp Thyme, Fresh (1/2 tbsp dried) |
Salt To Taste |
Fresh Ground Black Pepper To Taste |
4 Cups Potatoes, Peeled and Cubed |
2 lbs. Seafood, Boneless Fish, Shrimp, Crab, Etc |
Directions |

Cut bacon into 1" pieces and fry until crisp in a heavy pot |
Add next 5 ingredients and saute over med. heat until tender, about 10 min. |
Add tomatoes, clam juice, wine, thyme, salt and pepper to pot and bring to a boil for 1 min. |
Reduce heat, cover and simmer for 20 min. |
Add potatoes, return to a boil and simmer until potatoes are tender |
Add seafood and cook for 5 min., stirring gently |
