Hoppin John

1 Green Pepper (coarsely chopped)
2 Medium Onions (coarsely chopped)
1/2 Lb. Bacon (cut into 1 inch pieces)
1 Lb. Ham Slice (cubed)
1/2 Tsp. White Pepper
1 Tbsp. Seasoned Salt
1 Tsp. Basil
2 Cloves Garlic (minced)
Cayenne Pepper (to taste)
Crushed Red Pepper (to taste)
Return bacon to pot; add ham, onion, spices, garlic.
Add flour to grease, over medium heat, making a roux.
Remove bacon, saving half the grease.
Fry bacon in a heavy pot.
Add black-eyed peas and green pepper.
Add 1/2 to 1 cup water, slowly, to make a thick sauce.
Saute until onions are clear.
Simmer until peppers are cooked.
Mix in cooked rice.
Do not use very salty bacon (such as Virginia smoked).
