Hush Puppies


  • 1 Cup Oil For Deep Frying
  • 1 Tsp Flour
  • 1 Tsp Salt
  • 2 Tsp Baking Soda
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Garlic Powder
  • Cayenne Pepper
  • 2 Cups Yellow Cornmeal
  • 1 Cup Sweet Corn, Fresh or Canned, Drained
  • 1 1/4 Cup Milk or Buttermilk
  • 2 Large Eggs
  • 2 Tbsp Oil


  1. Heat oil to 350 deg for frying
  2. In a large bowl, sift together the first 6 dry ingredients, then stir in the cornmeal and green onions and add the corn
  3. In a separate bowl combine the eggs and milk and pour into the cornmeal mixture and stir until blended and add the hot oil and stir again
  4. This will make a stiff batter thick enough to stay on a spoon but not too dry. Adjust with milk or cornmeal to desired consistency
  5. Carefully drop into hot oil 1 teaspoonful at a time and cook until golden brown on both sides


  • Drain on paper towels and serve hot
