Barbecue Sauce (Tennessee Style)

6 Oz. Olive Oil

8 Oz. Ketchup

2 Tbsp. Worcestershire Sauce

2 Tsp. Mustard

1 Tbsp. Horseradish

6 Oz. Beer

1/4 Cup Brown Sugar

1/4 Cup Vinegar

6 Oz. Water

Salt, Pepper, Everglades Seasoning to Taste


Combine all ingredients and cook over a low heat for 30 minutes, simmer but do not boil.

Baste meat with sauce only during the last few minutes of cooking, as it burns easily.


Everglades Seasoning is made in Belle Glade, FL and may not be available in some places. If you can't get it just leave it out.

Works well on smoked fish, but add after smoking is at least 3/4 complete.
