Kung Pao Chicken

Ingredients

  • 1 Lb Chicken, cut into 1" cubes
  • 2 Cloves Garlic, finely minced
  • 1/2" Ginger Root, finely minced
  • 1 Pepper, Dried (Chinese chili or cayenne)
  • 1 Tsp Chili Oil
  • 1/4 Cup Soy Sauce
  • 2 Tbsp Peanut Oil
  • 1/4 Lb Snow Peas
  • 1/4 Cup Sherry Wine
  • Hot Cooked Rice

Directions

  1. Combine chicken, garlic, ginger root, pepper, chili oil and soy sauce in a covered bowl and marinate for 30 min. or longer
  2. Add peanut oil to a hot wok and cook chicken until done (3 minutes)
  3. Add peas and cashews and cook 3 more minutes
  4. Add wine, cook 1 more min.

Notes

  • Serve with hot rice
