Kung Pao Chicken

1 Lb Chicken, cut into 1" cubes

2 Cloves Garlic, finely minced

1/2" Ginger Root, finely minced

1 Pepper, Dried (Chinese chili or cayenne)

1 Tsp Chili Oil

1/4 Cup Soy Sauce

2 Tbsp Peanut Oil

1/4 Lb Snow Peas

1/4 Cup Sherry Wine

Hot Cooked Rice


Combine chicken, garlic, ginger root, pepper, chili oil and soy sauce in a covered bowl and marinate for 30 min. or longer

Add peanut oil to a hot wok and cook chicken until done (3 minutes)

Add peas and cashews and cook 3 more minutes

Add wine, cook 1 more min.


Serve with hot rice
