Barbecued Beef Tenderloin

Ingredients

  • 1 1/2 tsp. Salt
  • 1 3-4 lb. Beef Tenderloin (trimmed)
  • 1 1/2 tsp. Pepper
  • Mesquite or Hickory Chips
  • 1 Cup Barbecue Sauce

Directions

  1. Prepare smoker or grill, including a pan of water
  2. Soak hickory chips for 30 minutes
  3. Sprinkle roast with salt and pepper, place in smoker and cook for 30 min.
  4. Baste tenderloin with 1 cup of barbecue sauce and continue cooking until meat thermometer reads desired doneness. About 1 & 1/2 to 2 hrs. for rare.
